Valli Unite is a 245-acre organic cooperative in Piedmont that grows fruit, raises animals, harvests truffles, and produces honey, salami, and soulful everyday wine. Gathered from a 60-acre plot of Cortese, their light, non-vintage Bianco is steel-fermented with native yeast and a few days of skin contact and left unfiltered for a slightly cloudy, aromatic, citrussy, apple/melon, quaffable wine that complements summer fare. 12.5% abv and low sulfur.
