Antxiola (ahn-cho-la) is a steel-fermented blend of Hondarrabi Zuri (90%) and Hondurrabi Beltza, both native Basque Country varietals that are the basis for Txakoli (cha-koe-lee) wine produced near the Bay of Biscay. Anxtiola is crisp, dry, and slightly effervescent with notes of lemon, lime, green apple, herbs, and seashells. It's a natural accompaniment to whole grilled fish, tuna in olive oil, anchovies, ceviche, and shellfish.
