Sourced from vines planted in clay soils on sunny hillsides above the Bay of Biscay, Antxiola (ahn-cho-la) Rosado is steel-fermented red Hondarrabi Beltza left to macerate on the skins for just 24 hours to extract body, flavor, and a light copper-amber tint. Unlike many other Txakoli Rosé, Anxtiola is quite dry with notes of wild berries, minerals, hints of salinity, but no candy notes. Serve chilled with paella, grilled chicken and fish, appetizers, and summer fare.
