Before he died, Marcel Lapierre created Raisins Gaulois to fill the void between basic Beaujolais and his legendary crus. His son Mathieu continues the tradition of this organic Gamay made with hand-harvested fruit from younger Morgon vines. Unlike many other Beaujolais, Raisins goes through a semi-carbonic maceration that allows a little bit more structure to come through on this juicy, fresh, summer red with a snappy fresh palate of crushed red and black berries that finishes with a refreshing streak of acidity and minerals. Serve chilled and pair with charcuterie, steak frites, ham, roast chicken, halibut, cheese, and raspberry desserts.
