Star Filled Sky gets its evocative name from the night-time sky in the rural Tottori prefecture. Master Brewer Hakuma Kyoji produces this savory Junmai Ginjo with 50%-polished rice and a high percentage of Koji rice, which is rice inoculated with a mold that imparts distinctive umami notes. After three years in tanks, Star Filled Sky is dry with notes of honeycomb, smoked soy sauce, and mushrooms. Pair with stir-fried mushrooms, Peking duck, and pork dishes. Serve at room temperature.
