Sake can be an acquired taste for many palates. Despite being called "Rice wine," Sake is a brewed product that gets its flavor and texture from different types of rice, Koji (Aspergillus mold), yeasts, amino acids, as well as fermentation and aging times. Add the various designations and higher alcohol levels, and Sake is a confusing category to navigate. On the other hand, Himezen Princess Ume Sake is easy to understand. Made by the Ichinokura brewery located in Matsuyama, Miyagi Prefecture, this is a blend of low-proof Sake and the juice of local yellow plums (ume) for a deliciously aromatic, fruity, off-dry drink with just 8.5% abv. Serve chilled and enjoy with tempura, maki, and light fruit-based desserts.
