Named after her grandmother, Marie Courtin, Dominique Moreau pays homage to the "woman of the earth" namesake by crafting very limited editions of biodynamic single-vineyard, single-variety, single-vintage, zero-dosage Champagnes from the village of Polisot in the Côte des Bars. And in this case, biodynamic is much more than a marketing term. Marie Courtin's methods are the real deal with spirituality, lunar cycles, energy pendulums, and wholly manual and low-intervention winemaking. Even if Champagne enthusiasts want more of Dominique's wines, production levels will probably always be painfully low.
