Whereas most of the Pipeno we've tasted have been Pais-dominant with a juicy/lush profile, Leo Erazo, winemaker for Altos Las Hormigas in Mendoza, and Justin Decker decided to take the classic "farmers' barn wine" to another level. Made in a somewhat under-the-radar region of Southern Chile's Itata Valley, all the horse-plowed vineyards are composed of organic, dry-farmed, old bush vines planted in granite, clay, and quartz. This blend of 65% Cinsault, 30% Pais, and 5% Carignan is fermented with native yeasts in old barrels and bottled unfiltered with very little sulfur, yielding a lighter-bodied, chillable liter of snappy, fresh tinto with hints of currants, pomegranate, sour cherry, rose hips, and cranberry. If you're not a fan of high-acid, natural, dry wine, this is not for you. Otherwise, chill a liter and enjoy after a day of sun and sand with tacos, tamales, grilled fish, lechon, or even a 6-foot hero.
