An alumna of Francois Chidaine, Marie Thibault is a biologist who got into winemaking about 20 years ago. In 2011, she acquired a 8.5-acre domaine in Azay-le-Rideau (Touraine) and started crafting certified organic wines soon after. Thibault grows an off-beat assortment of grapes aside from the usual Chenin Blanc, including Côt (Malbec), Grolleau, and Gamay on soils of white clay, silex, and limestone bedrock. Roue Qui Tourne Rosé Bulles, which translates into "Spinning wheel bubbly rose," is 100% Gamay vinified into a dry, earthy, substantial bubbly made with no added sulfites. This Bulles is full of aromatics, acids, and berry fruit that's perfect as an aperitif but better with food. Which food? Whatever you've got.
