Le Fief Noir is a 50-acre property in the village of St-Lambert du Lattay. Dominique Sirot and Alexis Soulas are the two young winemakers behind the project in the heart of the “Anjou Noir,” which gets its name from the local black Schist soils, ideally suited for growing rich Chenin with huge acidity and minerals. Sirot & Soulas are low-intervention winemakers who hand harvest ripe fruit from 2 vineyard sites of Bonne Blanches and Les Bouillons planted with 25-35-year-old vines. 100% Chenin is direct-pressed into stainless steel & fermented with indigenous yeasts before lees-aging in the tank with weekly stirring. L'Échappée is a classic Anjou: dry with high acidity yet rich with stone fruit, pear notes, and a stony mineral streak. Pair with soft cheese, seafood, and chicken in cream sauce.
