Pascal Janvier, a former butcher, and his wife Dominique produce small quantities of Chenin Blanc on 22 acres of rented vineyards spread across 66 parcels. Cuvée du Silex is built on flinty soil, adding classic gunpowder flavor to this rich, fuller-bodied, slightly off-dry Chenin Blanc. Try decanting it for a while and let the wine warm up for best results. Before the fruit becomes apparent, the wine will show musk, flint, and gunpowder. After a bit of aeration, you will notice beeswax, aromatic wildflowers, grapefruit, sand & wet stones, ripe apricots, and nectarine. Pair with smoked trout or salmon, chicken with cream sauce, Boudin Blanc & Weisswurst, soft and subtle cheeses, Asian fare, and apple desserts.
