Paul-Henry Pellé is the fourth-generation winemaker to grow Pinot Noir and Sauvignon Blanc in the village of Morogues using organic farming practices and no chemicals for the purest expression of terroir. This village wine is a collection of fruit from seven different hillside vineyards planted on a mix of Kimmeridgean limestone and silex soils. The grapes are hand-harvested, fermented in steel, and aged in tanks (70%) and large wood barrels for a crisp yet rounded Sauvignon Blanc with notes of flint, chalk, herb, white grapefruit, and light gooseberry. Next time you're in the mood for a Sancerre or Chablis, try a Menetou-Salon.
