Incredibly, such good Méthode Traditionnelle Crémant can be had for $22, but Limoux, the ancestral home of sparkling wine first created in 1531 by Benedictine monks of Saint Hilaire Abbey, makes it possible to enjoy serious Blanc de Blancs every day of the week. Grown on hillside plots in the southern end of Occitanie near Roussillon, Toques et Clochers Brut is a blend of hand-harvested whole-cluster 55% Chardonnay, 35% Chenin, and 10% Mauzac from four different terroir aged on the lees for 15 months before disgorgement and final dosage of 8 gr/l. Dry but not too dry with notes of acacia, linden, pears, nectarine, and toasted brioche on a frame of vibrant mousse. Enjoy with food or solo.
