Perhaps it's just magical thinking, but Jean-Marie Bechtold's sparkler brims with the domaine's 30 acres of terroir around Kirchheim. You can practically taste the interior of the old half-timber winery on Rue Jean Gruninger and the Grand Cru plots in the shadow of the thousand-year-old Cathédrale Notre-Dame-de-Strasbourg. This Cremant is simply an exquisite Extra Brut sparkler made in the low-intervention traditional method using biodynamic Chardonnay, Pinot Auxerrois, and a smidge of Pinot Noir, which express themselves through floral, stone fruit, mineral, and pastry notes on a lush but elegantly dry frame. Excellent as an aperitif or with seafood and chicken.
