Patrick Piuze is a master of Chablis. Instead of growing his own grapes, Piuze selects the best hand-picked fruit from a dozen Grand & Premier Cru vineyards. Chardonnay for Les Fôrets comes from a single riverside parcel of 70+ year-old vines in Montmains. This level of Chablis approaches the sublime with minerals, chalk, ripe yellow fruit, apples, flowers, citrus, and bright acids. There is no new oak, vanilla, or butterfat to get in the way. Pair with chicken in creamy herb sauces, polenta, chowders, and shellfish. We also carry Piuze's more affordable but equally well- made Terroir Découverte Chablis.
