What really differentiates the old Grandes Marques Champagne from the tiny producers is their transparency. You can't blame the mega brands for wanting to keep their recipes a secret, including fruit sources, base wines, and grape blends. The small growers who make as many bottles in a year as the big brand makes in a day and who supply the big houses with fruit don't have to be so secretive. Young guys like Paul Girard are happy to spell everything out on the back label. Named in honor of his parents and their respective holdings (Philippe Girard's in Les Mesnil and Dominique Bonnet's holdings in Oger), this 30-acre property combines Chardonnay from both vineyards into A Mi-Chemin (middle of the path). It is a combo of vintage 2021 and reserve wines fermented in steel and oak with native yeasts before lees-aging in oak barrels for 36 months. What a beautiful expression of Côte des Blancs Grand Cru Chardonnay with linear cuts of minerals, chalk, and citrus rounded out by pear-almond pastry topped with fresh clotted cream on the finish.
