Eloquence is 100% Chardonnay grown on Clay and Kimmeridgian Limestone soil, fermented with native yeast in used barriques, and aged in used barrique before bottling. The final wine is a big complex bubbly resembling a Grand Cru Chablis with fizz. The focal point of Eloquence is nervy acidity, minerals, and brininess that frame earthy green and gold fruit as the wine aerates in the glass. If you're a fan of mature Champagne, this Blanc de Blancs is well suited to lay down in the cellar for a decade.
