By local regulations, producers are required to age their vintage Champagne on the lees for a minimum of three years. Hubert Soreau ages for about 100 months (8.3 years). But there's another reason this bubbly is so unique: all the Chardonnay comes from an enclosed parcel of an abbey planted in the 9th Century. The fruit is handpicked and vinified in old barrels for a complex bubbly showing citrus, white peaches, pears, stones, and briny minerals. Nervy acidity is still vibrating after a decade.
