Illahe (Chinook for earth, land, or soil) built its brand on Pinot Noir, but the winery also crafts Tempranillo, Pinot Gris, Grenache, Viognier, and the unlikely Grüner Veltliner. It's not a grape that gets much attention from American winemakers -- usually because it's not a varietal we're crazy about, but Illahe might change our minds. 2022 Grüner is a fuller-bodied wine with baking spice, stone fruit, baked apples, and marzipan notes that develop from a 24-hour maceration and fermentation in steel and acacia wood. Fans of aromatic grapes like Gewurz and Riesling will appreciate this dry yet expressive Grüner. Pair with poultry, sausages, butter bean soup, and smoked ham.
