Finding reasonably priced, old-school, organic Burgundy meant simply for pleasure is getting harder and harder. Valentin Montanet and his parents, Jean and Catherine, are no-nonsense producers who use indigenous yeast and low intervention to craft this steel-fermented Chardonnay with village fruit from the Mâconnais. The wine matures on lees for ten months, but the palate remains crisp and steely with notes of tropical fruit, ripe yellow fruit, apple blossoms, and lemon peel. An absolute pleasure with fish, rabbit, poultry, veal, and pork.
