Fortified wine lovers will go nuts for this rare treat from the Jura! Indeed, most of the local grapes go into wine, but a tiny bit of Macvin is possible when there is enough late-harvest fruit. Named for the "Marc-vin" made for nearly 500 years, Macvin can be a blend of white and red grapes whose must is boiled to reduce volume; then, homemade pomace brandy called Marc (similar to Grappa) is added to stop fermentation, followed by at least six years of aging. At 17% ABV, Gahier's Chardonnay blend is unctuous yet balanced with plenty of acidity and shows intense notes of plum and pear eaux-de-vie, dried apples, sultanas, and quince. Drink before or after dinner with stinky cheese, raclette & ham, pot pie, nut pastries, and not-too-sweet pear tarte tatin with blue cheese.
