We usually associate Bandol with substantial red and rosé wines, but a tiny bit (about 5%) of the region's total production is dedicated to white wines. Using traditional Rhone varietals, Daniel Ravier builds a full-bodied but lithe blanc using primarily Clairette, Ugni Blanc, and Bourboulenc from the cooler sections of Bandol and rested in old foudre for less than a year. Think of this as a less clunky version of Châteauneuf-du-Pape Blanc that's just as age-worthy. In its youth, Tempier Blanc is floral, zippy, herbal, and stony with citrus notes and ripe yellow fruit. As it ages, secondary and tertiary layers of honeycomb, earth, and briny oceanic notes emerge. Drink this with anything from fish to white proteins and your favorite aged cheeses.
