In the pantheon of dessert wines, there are French Sauternes, German Trockenbeerenauslese, TBA for short, and Hungarian Tokaji. They are also examples of wines made of botrytized (aszú) grapes, i.e., those withered on the vine due to a desirable grey fungus. Disznoko is late harvest Furmint, Hárslevelű, and Zéta grown close to the border of southeastern Slovakia and aged in oak to gain complexity and a palate of apricot, jasmine tea, honey, dried peaches, and white pepper. The number of Puttonyos, or grape baskets, is an old-fashioned way of describing sweetness. In Tokaj, 6 Puttonyos is the second-highest sugar level while maintaining fresh acidity and balance. Sweet but not cloying.
