In the Tokaj region, Furmint is commonly left to wither on the vine for its legendary dessert wines, but this grape also makes excellent dry Tokaji. Erika Rácz and her husband have 12.35 acres under vine in the northeastern corner of Hungary, where they grow all the classic white varietals. Sanzon is 100% Furmint pressed in whole bunches, fermented in old barrels with wild yeasts, and aged for six months in old Hungarian oak. Sanzon is a dry fuller-bodied wine with notes of bee pollen, minerals, lemon drops, apples, sultanas, and ginger. Pair with chicken, pork with apples, smoked fish or meat, and schnitzels.
