This Prosecco is more like Pet-Net than the usual mass-production sparkler that made Veneto famous. Starting with the old-vine vineyards, Glera and other varietals are grown on less than 20 acres of family-owned, chemical-free land in the Valdobbiadene DOCG. Instead of the wine being made entirely in tanks, the Follador family creates bubbles through a second fermentation in bottles and releases it unfiltered, yielding a slightly cloudy Col Fondo with loads of character and notes of dried flowers, almond biscotti, citrus, and fresh brioche.
