This is the first 100% Cabernet made by Broc Cellars -- and that's saying a lot after twenty years of winemaking in California. Broc wines are site-specific, so all the whole-cluster fruit was sourced from the Massa vineyard (1500 feet) in Carmel Valley, 13 miles inland from Carmel-By-The-Sea. Unlike most California Cabs, Broc's is organic, low-intervention, low-sulfur, fruit-driven juice fermented in steel with wild yeast and aged in neutral French oak barrique for 10 months. The flavor is pure Cabernet Sauvignon without any of the cosmetics. Think blue/black berries, cassis, bright acids, and soft tannins on a frame of 12.5% ABV. Pair with burgers, pork, and veggie casseroles.
