Peg Leg Porker refers not to the three-legged pig on the label but instead to Carey Bringle, the man behind Nashville's Peg Leg Porker BBQ Restaurant and Bourbon Whiskey. The brand seems like a novelty initially, but it makes sense when you see the bigger picture. First, Carey's grandfather was friends with Lem and Hap Motlow of Jack Daniel's, so bottles of Jack around the house were just a part of everyday life in Tennessee. Although he lost his leg to cancer as a young man, Carey went on to pursue competitive barbecuing and now whiskey making. Tennessee is defined by two brands: Jack Daniel's and George Dickel. They're both made with a minimum of 51% corn mash bill and aged in new barrels, which qualifies them as "Bourbon" by law. However, the use of the Lincoln County Process qualifies Peg Leg as a Tennessee Whiskey because it's filtered through through hickory charcoal. Carey produces several bottlings for his restaurant customers in Nashville and all of us above the Mason-Dixon line. As the youngest of the line, this 4-6 year-old whiskey is copper-mahogany in color with notes of caramel, dried red fruit, polenta, tobacco, and apples. The rich, creamy palate leads to a finish of pecan pie, baking spice, and pepper. 90 Proof.
