Fifth-generation owners/distillers Eduardo & Jaime use estate-grown organic lowlands Blue Weber, which they ferment with house yeasts and then double-distill in pot stills to preserve crystal clear Agave flavor. The real secret, however, is the water from volcanic springs that adds distinct character. Suave Añejo's smoothness comes from 20 months of aging in old Bourbon barrels. Enjoy a rich, somewhat Rum-like flavor of Muscovado sugar and spices over the lifted freshness of agave. Artesanal Tequila needs no cover-ups like salt rims and limes. Arette is a fantastic sipper.
