Siete Leguas was founded in 1952 and is still a family-run business in the Los Altos region of the Tequila Highlands. The Añejo is a product of agave runs from two processing locations on the estate: one uses a mule-drawn stone wheel, and the other shreds the oven-baked Blue Agave piñas using an old roller shredder. The juices are combined, twice distilled in copper stills, and aged 24 months in white oak for a light amber color with sandalwood, banana bread, and spices on the nose. A full textured palate with vegetal, fruit, and grass notes before a long finish of desert vegetation and a cut of wood tannin for dryness. 80 proof.
