Caballito Cerrero is technically a tequila because it comes from a distiller in Jalisco, but it's not actual tequila because Caballito is made with the indigenous Chato agave (related to Espadin) that predates Blue Weber, tequila's stipulated agave variety. Whatever we call it, Don Alfonso Jiménez Rosales does his own thing despite all the politics. This is 100% single-field Chato cooked in a brick oven, fermented in steel, then twice distilled and rested for 45 days. The 92-proof Mezcal-like spirit is earthy, vegetal, smoked-peppery, with some sweet tropical notes on the finish. Serve neat or over ice with a squeeze of citrus or some grilled fruit.
