Any winemaking region can produce vermouth. Spain has made excellent Vermut since the 19th century, and its first regional classification is pending for Vermut de Reus of Catalonia. But the Basques have their own twist with the first of its kind made of the local grape Hondarrabi Zuri. When not making Txakoli, Onditz Eizagirre and her sister Itziar craft Tximista as a crisp, mineral-driven wine with notes of botanicals, lime, and saltwater. Once a drink for older generations, Tximista is attracting a hipster audience with retro-cool pre-lunch "vermouth hour." Sounds like a great idea. 15% ABV.
