"Intens" Rosat Brut Nature Corpinnat* is a traditional-method Cava of biodynamic, saignée Mourvedre (87%) and Grenache from Sant Sadurní d'Anoia (just outside of Barcelona), aged forty months on the lees under natural cork and hand-riddled until the wine is manually disgorged and resealed without dosage. Fuller-bodied with a light tawny/ruby hue after seven years of aging, Rosat exhibits a fleshy complex nose of red fruit compote, spice, and earth notes derived from Mourvedre's concentrated depth & power and Grenache's perfumed elegance. Serve it lightly chilled with crispy ham croquetas, roast pork, and true Paella Valenciana (no seafood) made with chicken, rabbit, and snails. *Corpinnat refers to an association of high-quality winemakers & fruit growers.
