Fabrice Pouillon makes some serious Biodynamic Champagne. All the hand-harvested fruit is crushed in an old wooden press, and the juice flows into enameled iron fermentation tanks before aging in oak barrels and stainless steel. The final blend is new wine and a reserve cuvee dating back to the 1990s. Grand Vallée is a blend of primarily Pinot Noir and Pinot Meunier with a small percentage of Chardonnay from Vallée de la Marne and Montagne de Reims. With such a high proportion of red grapes, this Extra Brut is a concentrated wine with red berry notes lifted by citrus, creamsicle, and nectarines.
