Patrick Piuze currently makes a whopping 23 wines. That number is easier to achieve because Piuze does not grow Chardonnay and instead purchases hand-picked fruit from the best climats across Chablis. Whether Grand Cru, Premier Cru, or a village lieu-dit, Piuze gives you the best expressions of low-intervention Chablis, which is steel-fermented with indigenous yeasts and aged in old oak. Terroir Découverte comes from a 4.4-acre vineyard near the plots of 1er Cru Vaulorent and Grand Cru Des Couverts. Notes of green apple, flint, preserved lemon, stone fruit, and minerals.
