New Zealand is known for Sauvignon Blanc, so they might as well use it to make sparklers. When the weather is just right, there's also some excellent late harvest of NZ Sauvignon Blanc! In the meantime, check out Orbis Moderandi Petillant Naturel from Hunter's Estate in Waihopai Valley, Marlborough. It's 100% single-estate Sauvignon Blanc, which James & Peter Macdonald bottle partially fermented with the lees, thus creating soft bubbles under the crown cap. This natural sparkler is unfiltered, medium-bodied, and dry with a fresh lemonade color and notes of grapefruit soda, mineral, and floral notes.
