This is a classic big-ol' Shiraz reminiscent of Australia's heyday. Made by Sarah Marquis (mahr-kwiss), Mollydooker celebrates unrestrained enjoyment with palate-coating wine. Carnival of Fun is 100% McLaren Vale Shiraz aged in 100% new American oak and clocks in at a hefty 16.5 ABV. However, there is ample acidity and tannic structure behind the intense fruit with notes of red cherry, blackberry, rose water, chocolate, plum, and licorice. Because this wine is protected with nitrogen, Marquis recommends pouring some into a glass, recapping, shaking the bottle, and repeating several times, allowing nitrogen to escape and flavors to expand.
