Smarazen is a sparkling blend of seaside Malvasia and Trebbiano (70%) from Emilia-Romagna. To be exact, Smarazen is actually a metodo ancestrale frizzante closer to Champagne than Pétillant Naturel or "Pet-Nat," which means the latter gains bubbles naturally in the bottle from residual sugar and yeasts in the original wine. Mirco Mariotti expertly crafts Smarazen by vinifying the initial wine and then refermenting it in the bottle with grape must for an unfined/unfiltered 11.5% abv sparkler showing fine bubbles, and a fresh, zesty palate of minerals, salted lemon, and pleasantly aromatic yellow fruit. Shake before opening to incorporate the lees and serve well chilled with fried calamari, grilled fish, sardines, tonno in olive oil, and salumi.
