The label features a cow, a critical animal in Biodynamic farms like this one in eastern Austria. Other beneficial creatures are bees, bugs, chickens, pigs, plowing animals, sheep, and goats. You must be careful when letting pigs and goats loose into a vineyard to mow between the vines because they will eat everything, including the juicy baubles of ripe Pinot Noir that go into Prosa. This is 100% Pinot Noir fermented spontaneously in steel with wild yeast. Pink with a streak of wild strawberry, blossoms, and red cherry on a fruity soft finish. Pair with freshwater fish, wurst, cheese, summer salads, and fruit & cheese platters.
