Before Pinot Grigio was the most popular Italian white wine, there was Soave from the Veneto. The Soave region eventually became a victim of its success as mega-wineries cranked out endless cheap, bland wine. Fifty years later, most people have either forgotten about or never heard of Soave, but not Winemaker Graziano Prà, who makes several Classico versions in Monteforte d'Alpone. Otto is a fuller medium-bodied steel-fermented Garganega (100%) with citrus and almond, apples, peaches, and a touch of brine. It's time to drink Soave again when serving light pasta, seafood, salads, poultry, and cheese.
