Hauvette has a nondescript label offering virtually no information about this obscure Provençal wine. Let's start with the region. Indication Géographique Protégée Alpilles is located within Parc Naturel des Alpilles. The winery is in Saint Remy de Provence, the site of Vincent Van Gogh's Asylum series (e.g. The Starry Night). Dominique Hauvette lives among these craggy peaks, mesmerizing colors, and bright sunshine. Amethyste is her 5-acre collection of Biodynamic Cinsault augmented by Carignan & Grenache vinified in concrete "eggs" for unrivaled, unadorned complexity and purity. It is closer to delicate Burgundy than a heavy Rhone with dusty notes of clay/limestone soils, garrigue, and lightly colored red berries with touches of sauvage and spice. We recommend this with preparations like lentils with rabbit, Socca, Pissaladière, and roasted stuffed veggies.
