Dedicated to Louis, Elisabeth Salmon's brother, who was there since the beginning in 1818. The 2009 is 100 % Grand Cru Chardonnay from Mesnil-sur-Oger, Chouilly, and Cramant fermented 100% in tanks with partial malo. 5.10 g/l total sugar. Golden in the glass with emerald hues, this elegant yet powerful Chardonnay expresses notes of brioche, almond croissant, nougat, sea shells, peppery baking spice, candied citrus, yuzu, and chalky minerals. Excellent with shellfish and sweetbreads.
