Applejack is the second oldest alcoholic beverage made in Colonial America. The first was hard cider, which early settlers let freeze in winter to concentrate alcohol levels. "Jacking" (removing frozen water) was the method for making Applejack until heat distillation became more common. Prohibition ended most Applejack distilleries, and now only a few producers are making high-end renditions of American apple brandy. Starlight uses estate-grown apples distilled in a copper pot still and then ages in new charred American oak barrels. Dry with notes of caramel, dried fruit, vanilla, wood, and apple pie. Excellent in spiked hot cider, as a digestif, or as a cocktail ingredient. 83 proof.
