The secret to Jamaican rum is "dunder," the flavor-rich distillation by-product used to cultivate yeast and add a signature flavor profile. Produced at Hampden Estate in Jamaica, Smith & Cross is an homage to an old London firm dating back to 1788 and their authentic rum with all its character, funk, and complexity. This pot-still Navy Strength (bottled 114 proof) rum has a nose of dried fruit, allspice, and hot whiffs of alcohol. The palate is fruity and oily with medicinal notes, apple, and cedar before a long dry finish of citrus pith, black walnut, and funky petrol and vegetal notes.
