First of all, Pisco is not rum. It's a delicious Chilean/Peruvian brandy that deserves more attention. Suyo comes from the Mala Valley of Lima, Peru, right on the Pacific coast. The No. 1 edition is made with local Quebranta grapes and distilled in a copper alembic still to 80 proof. No water is added to dilute flavors of saltwater taffy, papaya, mango skin, custard, and floral notes. Naturally, you could add Suyo to simple syrup, lemon juice, and an egg white for a classic Pisco Sour, but this brandy is also good with ginger beer or sipped neat with a citrus twist.
