Tom Cat is an ode to Old Tom Gin from 18th-century England when pubs displaying a black cat statue dispensed sweetened rot-gut gin. After slipping their money into a slot, the most desperate customers received a small portion poured through a tube directly into their mouths. Barr Hill's Tom Cat is a far cry from the intoxicated days of the Gin Craze. Starting with Barr Hill's regular gin that is aged in new American oak barrels, Tom Cat has a touch more sweetness and plenty more complexity with dark candied notes similar to fine bourbon or aged rum.
