You can cook with this dark, old-school Marsala, but it's nothing like that jug of sweet wine typically poured into veal and chicken recipes. Made by third-generation winemaker Ercole Alagna, Ostinato is late-harvest Grillo, Inzolia, and Catarratto grown in western Sicily and fortified to 17% ABV. It's in the same class as a fine Sherry or Madeira with notes of tamarind, apricot preserve, burnt orange, almonds, cinnamon, tobacco, salted caramel, and baking spice. Finishes off-dry with searing acidity. Pair with cheese and charcuterie or mix with Gin.
