Milan Nestarec farms 20 acres of land in Moravsky Zizkov and Velke Bílovice (about 50 miles north of Vienna), where he makes a bunch of delicious wines from traditional Austro-Germanic and French grapes. Forks & Knives is his staple table red composed mainly of Blaufränkisch and Pinot Noir, but it's usually a bit of a field blend fermented with indigenous yeasts in stainless steel tanks and aged in neutral barrels. Forks & Knives is bottled unfiltered/unfined, without added sulfur, and leaps from the glass with spice, cherries, figs, pomegranate, and blue fruit. It's medium-bodied, dry, zippy, a tad funky, and goes perfectly with duck, chicken cutlets, sausages, funky cheeses, and grilled oily fish. Vegan.
