Manincor Schiava was created by Count Michael Goess-Enzenberg and his fruit grower Helmuth Zozin, who are important figures in Europe's Biodynamic farming movement. The count's family has been in South Tyrol's Kalterersee region for 800 years, and Michael has continued to build on that tradition while improving the wine. Schiava [skee-ah-va] is also known as Trollinger or Vernatsch and is grown in other northern regions such as Austria and Germany - and that "northern" characteristic is immediately apparent in Der Keil's ruby color, delicate nose, and palate of cherries, toasted almond, herb, spice, and raspberry notes. Serve cool with sausages, fried fish, poultry, pesto, and pasta with tomato sauces.
