Making Les Capriades Pet-Sec is science and art, requiring skill in choosing the best Chenin, Chard, and Menu Pineau from growers around Faverolles-sur-Cher, allowing yeast to do its magic, and knowing when to bottle during a single fermentation. After several months, the bottles are riddled and disgorged before being capped off with a handy resealable stopper. Notes of pear compote, lemon curd, skin tannins, and floral notes over soft bubbles. Although the wine is only 9.8 ABV, it has only the slightest touch of residual sugar. Low Sulfites.
