I Clivi is situated so far east in Italy that you could hike to Slovenia in less than an hour, so there's a unique take on food and wine. Instead of the usual "Italian" grapes, the Zanusso family chooses to work with 15-80-year-old vines of Friulano, Ribolla, Verduzzo, Malvasia, Cabernet Franc, and nearly-extinct Schioppettino within the provinces of Udine and Gorizia. This old-school, old-vine Schioppettino (skee-oh-pet-teen-oh) is made using wild yeasts, just what's on the grape skins, and fermented and aged in steel for seriously peppery freshness over bright red berry fruit with touches of the forest floor. Try this with braised chicken or rabbit and mushroom pastas.
